The menu evolves with the seasons, is determined by the chef’s inspirations, and employs a locavore philosophy. The ingredients are locally sourced and most of the produce is fresh-picked at Château Saint-Roux’s organic vegetable garden and orchard, in nearby Le Cannet-des-Maures.
The menu features selections like Pork fillet with celery root on UP red wine-poached beets, inspired by the chef’s Corsican culture, or Burratina verbena lobster with orange blossom-infused tomatoes, or Bottarga caviar sea bass with saffron rock fish soup. The flavors enchant and astonish, and their common denominator is always extreme freshness.
